When a bag comes in, we both still get excited. With every delivery, we are reminded how far we have come over the last couple of years. The bags weigh 65 pounds, and we keep Fed Ex hopping. Before the customer ever tries the first sip, Ken makes sure it is up to snuff by doing a quite informal “cupping” to make sure there are no surprises. Stuff happens, we are grateful it hasn’t happened to us, and we want to keep doing what we are doing so it stays that way.
Aroma:
Nothing like walking in on a roasting day where a bean heavy on the chocolate side is being roasted. You know – like when you go outside on thanksgiving day and then come back in later, how AMAZING it smells? Same kind of thing. When the bean gets to a certain point, you can’t tell if you are smelling fresh baked bread/chocolate chip cookies, or whether it is coffee. THAT is my favorite part of the roast.
My other favorite part is to be outside when Ken is roasting a dark bean and the smoke is heavy and smells hit with the end of the roast. I love to imagine what the coffee loving neighbors that don’t know us yet think when they are in their yards or walking to the mailbox and can’t figure out where that aroma is coming from.
